Bexley Farmers' Market: May 30th
“A fruit is a vegetable with looks and money. Plus, if you let fruit rot, it turns into wine, something Brussels sprouts never do.”
P. J. O’Rourk
Strawberries, strawberries, strawberries! They're here, but not for long. Strawberries have a short season, usually lasting 4-6 weeks, depending on the weather. So whether you're canning, freezing, or just snacking, stock up while you can.
In the mood for a quick, but delicious strawberry jam? Try this recipe from Martha Stewart.
Quick Strawberry Jam
1 quart hulled strawberries
1/2 cup sugar
2 tablespoons fresh lemon juice
In a food processor, process strawberries until coarsely chopped. Transfer to a large skillet and stir in sugar and lemon juice. Cook over medium-high, stirring frequently, until jam is thickened and bubbles completely cover surface, 9 to 10 minutes. Transfer jam to a jar and let cool to room temperature. (To store, seal jar and refrigerate, up to 10 days).
Yield: 1 3/4 cups
